This recipe is from my friend, Michelle Hall, who passed away from breast cancer in 11/2013.  We were part of a group that loved to talk about food and shared recipes with each other in our online breast cancer support group.

Ingredients
  • 1 Granny Smith Apple
  • 1 Red Apple, (gala, fuji or empire, preferred)
  • 1⁄ 2 cup Celery, chopped
  • 1⁄ 2 cup Walnuts,  chopped
  • 1⁄ 2 cup Craisins, (can sub raisins, dried cherries, etc)
  • 1 splash Lemon Juice, to prevent browning
  • Hellman's Light Mayonnaise
Steps
  1. Core and chop both apples into bite-sized pieces and put in a large bowl.
  2. Add celery, walnuts, craisins and lemon juice to the bowl with the apples. Toss to mix and coat with the lemon juice.
  3. Add enough mayonnaise to just bind everything together. Be careful not to add too much.
