Ingredients
  • 1 tablespoon avocado oil
  • 1 - ½ lb. boneless skinless chicken breast, diced into 1 ” pieces
  • 1 medium onion, diced
  • 2 bell peppers, cored and diced

  • 1 garlic clove, minced
  • 1 ” piece ginger, peeled, and grated or minced
  • ¼ cup bbq sauce (we recommend unsweetened)
  • 1 - ½ cups diced pineapple
  • 1 cup pineapple juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon tapioca starch (optional, for thickening)
  • 1 tablespoon water
  • Pinch red pepper flakes
  • Scallions, sliced, for garnish
