Pork, Apple, Cabbage

Ingredients
  • 1 rutabaga or 2 large potatoes, chopped
  • 1 lb. pork (loin, chops, smoked, pulled) in bite-sized pieces
  • ¼ medium head cabbage, chopped
  • 3 to 4 carrots and/or parsnips, chopped (opt)
  • 3 c chopped kale
  • 1 large firm apple, chopped
Steps
  1. Boil rutabagas or potatoes for ~20 minutes in salted water.
  2. Saute pork until cooked through.
  3. Add cabbage, carrots, parsnips and cook 3 to 4 minutes.
  4. Add apple and kale.
  5. Drain rutabagas and add to pot.
  6. Season with salt, pepper, smoked paprika, etc.
