  • 1 cup Basmati Rice, uncooked, rinsed and drained
  • 1 15 oz. can of pinto beans, drained and rinsed well
  • ½ cup corn
  • 1.5 cups diced onion
  • 1.25 cups water
  • 1 cup jarred salsa
  • 1.5 tbsp taco seasoning
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 2 serrano chilis, finely diced
  • 6 cloves garlic, peeled and grated
  • 2 scallions, finely chopped with whites and green parts separated
  • 2 tbsp oil
  • shredded cheese, lettuce, pico de gallo and sour cream to serve on top
