Moroccan Chickpea Stew {Vegan, Grain Free, Gluten Free}
Ingredients
  • 3 tablespoon oil
  • 2 onions, finely diced
  • ¼ teaspoon salt
  • 3 to 4 cloves of garlic, minced
  • 2 teaspoon fresh ginger, grated
  • 2 tablespoon tomato paste
  • 1 tablespoon Ras El Hanout (see notes)
  • 26oz chopped tomatoes (I use packaged tomatoes)
  • 2 to 3 cups vegetable broth
  • 30oz or 2 cans chickpeas, cooked
  • 2 tablespoon sambal oelek or harissa paste
  • juice of 1 lemon
  • 1 cup parsley, chopped
