Roasted Brussels Sprouts with Bacon & Butternut Squash

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound butternut squash, peeled and cut into bite-size cubes
  • 1 tablespoon olive oil
  • ½ teaspoon McCormick® Garlic Powder
  • ½ teaspoon McCormick® Whole Thyme Leaves
  • ½ teaspoon salt
  • ¼ teaspoon McCormick® Pure Ground Black Pepper
  • 5 slices bacon, chopped
  • 1 shallot, finely chopped
  • ½ cup dried cranberries
  • ¼ cup balsamic vinegar
  • 1 teaspoon whole grain mustard
  • ½ cup chopped pecans, toasted (optional)
  • ⅓ cup crumbled blue cheese, (optional)
