Tomato Vinaigrette Salad Dressing

1 medium tomato chopped (including seeds; about ¾ cup)

⅓ cup vinegar

2 tbsp mustard

1 tsp ground cumin

1 medium clove garlic

Place all of the ingredients into a blender and blend until smooth.

Store leftover dressing in a covered container in the refrigerator for up to give days - shake before using.
