It's your basic comfort meal

Ingredients
  • 2 lbs ground beef
  • 2 eggs, beaten
  • ½ cup dry breadcrumbs
  • ½ cup beer (alternates: apple juice, milk, or water)
  • ½ cup shredded carrots
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 Tbsp dried chopped onion (optional)
  • 2 to 3 Tbsp ketchup or barbecue sauce (optional)
  • 2 to 3 slices of white American cheese (optional)
Steps
  1. Preheat oven to 350°F
  2. In a mixing bowl, combine eggs, breadcrumbs, beer, carrots, thyme, salt, and onion (if desired). Add meat and mix well.
  3. In a shallow baking dish, form mixture into a loaf. Try to make it a consistent height and width so that it cooks more evenly.
  4. Bake for 70 minutes or until it reaches an internal temperature of 160°F. When you take it out of the oven, transfer the meatloaf to a platter and top with sauce or cheese if desired. Let rest for 5 to 10 minutes before slicing.
