Healthy Shrimp and Chive Rice Paper Dumplings

Ingredients
  • subheading: For Dumplings:
  • 1 lb. Peeled and Deveined Shrimp, cut into small pieces then rough chopped
  • 1 Clove Garlic, minced
  • ¾ Cup Chinese Chives (also known as garlic chives), chopped small
  • 1 Tbsp Fresh Ginger, minced
  • 1 Tbsp Cornstarch
  • ¼ tsp Kosher Salt
  • ¼ tsp Pepper
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Soy Sauce
  • 12 to 14 Sheets Rice Paper
  • 2 Tbsp Avocado Oil

  • subheading: For Sauce (or sub sweet chili sauce):
  • 1 Small Clove Garlic, minced
  • 2 tsp Carrot, minced
  • 1 Lime, juiced
  • 1 Tbsp Fish Sauce
  •  
  • subheading: Vegan Modification:
  • Sub in 1 lb. mixed mushrooms (or small diced tofu) for shrimp (sauté the veggie filling before folding the dumplings)
  • sub in soy sauce for fish sauce in the sauce
