Instant Pot Chicken Adobo with Potatoes and Peas (Filipino)
Ingredients
  • 3 tbsp vegetable oil

  • 6 Chicken Thighs bone in with or without skin
  • 6 tbsp dark soy sauce or (4 tbsp Kikkoman plus 2 tbsp Dark Mushroom Soy Sauce)
  • 2 tbsp. ABC Sweet Soy Sauce or brown sugar
  • ¼ cup white cane vinegar, if possible, if not, you can use distilled vinegar or cider vinegar
  • 2 tbsp ketchup
  • 1 tbsp black pepper corns
  • 1 tbsp brown sugar, according to taste
  • 8 cloves garlic, peeled and smashed
  • ¼ tsp red pepper flakes, according to taste, optional
  • 1-¼ cups low sodium chicken broth
  • 2 dry bay leaves
  •  
  • 2 to 3 baking or yellow potatoes, sliced into ¼” rounds or 2” chunks
  • 1 cup frozen peas
  • Slurry/Thickener - mix 1 ½ tbsp cornstarch with 2 tbsp water. Set aside.
