Roasted Vegetables
Super healthy and very delicious way to cook vegetables.
Ingredients
  • ¼ cup (50 mL) olive oil
  • Greek Seasoning Packet (to taste)
  • 1 each red and green peppers, cut into large cubes
  • 2 zucchini chopped into 1" rounds and then quartered
  • 1 yam, cut into 1½ inch (4 cm) cubes
  • 10 large mushrooms, quartered
  • 3 cloves of garlic, chopped
  • 1 large red onion, cut into eighths
  •  
  • subheading: You can use any vegetable of your choice. Other options are:
  • 1 acorn squash, peeled and cut into 1½ inch (4 cm) cubes
  • 4 parsnips, peeled and cut lengthwise
  • 4 carrots, peeled and cut lengthwise
