Super healthy and very delicious way to cook vegetables.
Ingredients
- ¼ cup (50 mL) olive oil
- Greek Seasoning Packet (to taste)
- 1 each red and green peppers, cut into large cubes
- 2 zucchini chopped into 1" rounds and then quartered
- 1 yam, cut into 1½ inch (4 cm) cubes
- 10 large mushrooms, quartered
- 3 cloves of garlic, chopped
- 1 large red onion, cut into eighths
- subheading: You can use any vegetable of your choice. Other options are:
- 1 acorn squash, peeled and cut into 1½ inch (4 cm) cubes
- 4 parsnips, peeled and cut lengthwise
- 4 carrots, peeled and cut lengthwise
