Skinnytaste's Chicken Caprese Pasta
Ingredients
  • 1 large boneless, skinless chicken breast, cut into small cubes
  • Dried basil seasoning, to taste
  • Salt and pepper, to taste
  • Cooking spray
  • 9 ounces whole wheat pasta (I used penne, but any shape would do)
  • 3 teaspoons extra-virgin olive oil
  • 6 garlic cloves, coarsely chopped
  • 2½ cups halved cherry tomatoes
  • ¼ to ½ cup thinly sliced fresh basil (I used a little more than ¼ cup because I LOVE basil)
  • 4 ounces part-skim mozzarella cheese pearls (or cut a large chunk into small cubes)
