The Best Classic Shepherd's Pie
Ingredients

  • 1 tbsp olive oil
  • 1 lb. 90% lean ground beef
  • 1 medium yellow onion, minced
  • 1 large carrot, minced (½ c.)
  • 1 celery stalk, finely chopped (½ c.)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 2 garlic cloves, minced
  • 2 tbsp all purpose flour
  • 1 ½ cup beef broth (1 c. broth + ½ c. red wine)
  • 1 tbsp parsley leaves
  • ½ cup frozen peas
  • ½ cup frozen corn
  • subheading: POTATO TOPPING:
  • 2 lb. russet potatoes (about 2 large potatoes, peeled and cut into 1” cubes)
  • 4 tbsp unsalted butter
  • ¾ cup half & half
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup parmesan cheese
  • 1 egg yolk, lightly beaten
