My Amazing Gnocchi Veggie Soup
This is a fast recipe that can be thrown together in 20 minutes or less.
Ingredients
  • 1 carrot chopped
  • ¼ large onion
  • ¼ cup veggie stock
  • 2 Tbs Italian herbs
  • 1 Tbs oregano
  • 1 ¼ Cup canned tomatoes (blended)
  • 5 dashes of liquid smoke
  • 1 ½ Tbs garlic powder
  • ½ Tbs cinnamon
  • 2 Tbs molasses
  • 1 Tbs lemon juice
  • 1 Tbs Hoisin sauce
  • 1 tsp black pepper
  • 1 can green beans (drained)
  • 1 can kidney beans (drained)
  • ½ container of Gnocchi
Steps
  1. In a soup pan put the veggie stock, onions, and carrots into the pan. Cook until carrots are tender. Add the herbs and mix around. Next add the blended canned tomatoes and the remaining spices. Once it has cooked for about 4 minutes add green beans, kidney beans, and dried Gnocchi to cook. Cook until all of the ingredients are to desired doneness. Eat while hot.
