Lemon-Saffron Chicken (Tangia)

  • 5 t GROUND CUMIN, DIVIDED
  • KOSHER SALT AND GROUND BLACK PEPPER
  • 3 POUNDS BONELESS, SKINLESS CHICKEN THIGHS, TRIMMED AND PATTED DRY
  • 2 T EXTRA-VIRGIN OLIVE OIL
  • 2 MEDIUM YELLOW ONIONS, FINELY CHOPPED
  • 12 MEDIUM GARLIC CLOVES, CHOPPED
  • 2 t GROUND TURMERIC
  • 2 t GROUND GINGER
  • 2 t GROUND CORIANDER
  • 1 t SAFFRON THREADS, CRUSHED
  • 3 T SALTED BUTTER, CUT INTO 3 PIECES
  • ½ c PIMENTO-STUFFED GREEN OLIVES, CHOPPED
  • 3 T GRATED LEMON ZEST, PLUS ¼ CUP LEMON JUICE
