Vegan Tzatziki w/cashews
Ingredients
  • 1 C raw cashews
  • ½ C water
  • ½ lime or lemon, juiced
  • 2 garlic cloves
  • ½ tsp sea salt
  • ¼ tsp ground pepper
  • ½ C shredded cucumber
  • 3 tbsp fresh dill, chopped
  • tip: when using raw cashews you want to make sure to soak them for at least 3 hours. I just fill a jar with water and the amount of cashews I need and leave it in the fridge overnight when I know I want to make something. Never use the soaking water in a recipe. Be sure to drain and rinse the cashews thoroughly in fresh water.
