Zucchini with Marinara and Ricott

Ingredients
  • 2 medium zucchini (quartered and sliced -or- zoodles
  • EVOO cooking spray
  • 4 oz marinara (no sugar)
  • 4 oz ricotta cheese
  • 0.5 oz Parmesan cheese
Steps
  1. Sauté zucchini in large pan spritzed with EVOO.
  2. Add marinara and simmer until some of the juices have cooked out.
  3. Remove from heat.
  4. Weigh out your veggie portion.
  5. Stir in ricotta and top with Parmesan.
