  • 3 tablespoons lemon juice
  • 5 1⁄3 cups all-purpose flour
  • 2 teaspoons salt
  • 1 1⁄2 teaspoons baking powder
  • 1 1⁄2 teaspoons baking soda
  • 1 cup (16 tablespoons) cold unsalted butter, cubed
  • 6 tablespoons cold shortening cubed**
  • 2 tablespoons full fat sour cream (full fat Greek yogurt may be substituted)
  • 1⁄4 cup heavy cream, for brushing before baking
  • ¼ cup melted butter, optionally for brushing after baking
