Soba Noodle and Steak Salad with Ginger-Lime Dressing
Ingredients
  • 8 ounces soba noodles
  • ¼ cup soy sauce
  • ¼ cup lime juice (from 2 limes)
  • 2 teaspoons finely grated fresh ginger
  • 1 teaspoon sesame oil
  • ½ teaspoon light brown sugar
  • 1 pound hanger or skirt steak, at room temperature
  • Kosher salt and black pepper
  • 1 tablespoon canola or grapeseed oil, plus more as needed
  • 8 ounces baby bok choy, halved lengthwise if large
  • 1 cup julienned or thinly sliced carrots
  • 3 to 4 radishes, thinly sliced (optional)
  • ½ cup thinly sliced scallions (2 or 3 scallions)
  • ¼ cup fresh mint, torn
  • Flaky salt, for serving (optional)
