Instant pot cauliflower leek soup
Instant pot cauliflower leek soup
Ingredients
  • 2 leeks
  • Head of Cauliflower
  • 3 garlic cloves chopped or minced
  • 2 cups chicken broth or any broth
  • 3 to 4 stalks of celery chopped
  • 1 to 2 tsp Trader Joe’s onion salt or seasoning you prefer.
Steps
  1. Sauté the garlic, chopped leeks and the celery in avocado oil in the instant pot until everything is nicely wilted and somewhat translucent.
  2. Add the cauliflower and the broth and set it high pressure for five minutes. It can be slow release if needed.
  3. Add Trader Joe’s onion salt.
  4. Using your immersion blender or a blender or food processor purée all the ingredients.
  5. Add salt, heavy cream and or cheese as desired.
