Sharon's Breakfast Casserole

Ingredients
  • 1 frozen  bag tator tots
  • 1 lb mild breakfast sausage
  • 1 package of Fairway Southeastern Mills Sausage Flavored Peppered Gravy Mix, prepared
  • ⅔ cup milk
  • 10 eggs
  • 2 cups cheddar cheese
  • 2 cups mozzarella cheese
Steps
  1. Everything is cooked before putting together.  You’ll need a 9x13i inch pan plus three skillets.
  2. In a 9x13 cake pan, put in a pkg of (frozen bag) tater tots, put the pan in the oven and bake them per instructions.
  3. While that's going on, cook a pound of mild sausage, then drain off the grease and take a potato masher to it so that it's somewhat crumbly.
  4. In another pan, prepare a pkg of sausage gravy mix where you just add water or milk and make the gravy.  I used Fareway's Southeastern Mills Sausage Flavored Peppered Gravy Mix. After it's thick, I add maybe ⅔ cup more milk and let thicken to make it go further.  Then put the sausage in it.
  5. In another pan, scramble 8 to 10 eggs with a splash of milk in them.
  6. Take the tots pan out of the oven.
  7. Sprinkle your scrambled eggs over the potatoes.
  8. Pour your sausage gravy over the eggs as the next layer.
  9. On top of this I put probably 2 cups of mild shredded cheddar cheese and 2 cups of mozzarella cheese.  Put it back in the oven to melt the cheese and very slightly brown.
  10. You can of course add extra things to your liking, like onion, green peppers, mushrooms.
