Grilled Carrots with Limey Hot Sauce and Feta
Ingredients
  • 1 ½ pounds small to medium carrots, peeled and halved lengthwise
  • 3 tablespoons of Olive oil
  • Salt and Pepper
  • ¼ cup fresh lime juice
  • ½ jalapeño, finely chopped (remove seeds if you want less heat)
  • 2 cloves of garlic, grated or finely minced
  • 2 teaspoons honey
  • 1 cup fresh cilantro, tender leaves and stems, roughly chopped
  • 1 to 2 ounces feta cheese (or cotija if you have it)
