Ingredients
  • ¾ lb boneless, skinless chicken breast
  • 1 knob ginger ( 1 inch, 2.5 cm)
  • 1 clove garlic
  • freshly ground black pepper
  • ¼ tsp Diamond Crystal kosher salt
  • 1 tsp sake
  • 2 tsp soy sauce
  • subheading: For the Batter:
  • 1 large egg (50 g each w/o shell)
  • ⅓ cup cake flour (weigh your flour or use the “ fluff and sprinkle“ method and level it off; you can make your own cake flour)
  • ⅓ cup potato starch or cornstarch
  • ⅓ cup water
