Yam/Quinoa Salad/Guacamole Bowl w/ Spinach/Tomato salad

Ingredients
  • ½ baked yam
  • ½ cup cooked quinoa boiled in ck broth
  • 4 T Trader Joe's guacamole
  • chopped spinach w/ ½ diced tomato, apple cider dressing
Steps
  1. Arrange all cooked and completed ingredients in a large pasta bowl.
  2. May add broccoli/red peppers/chicken to quinoa.
Notes
  • Meal calories per serving w/out ck = 325, w/1 ck tend = 400
  • if using ¼ yam w/ ck = 350
