Ingredients
  • 1 to 1.5 lbs chicken breast/tenders chopped in cubes
  • ½ to 1 tsp cayenne pepper use less if you don’t want it as spicy
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp salt
  • olive oil
  • 2 cups rice quinoa, farro, barley (or any grain you like!)
  • 4 cups water or broth
  • cherry tomatoes chopped
  • 1 can black beans rinsed
  • lettuce chopped finely
  • roasted corn I use a frozen bag from Trader Joe’s - can also use canned corn
  • subheading: Avocado Lime Crema:
  • 1 large or 2 small avocados
  • juice of 2 limes
  • ½ cup sour cream or greek yogurt
  • pinch of salt
