Fennel Roasted Chicken and Peppers
Ingredients
  • 1 tbsp. fennel seeds
  • 1 tbsp. finely grated orange zest
  • 3 peppers (red, yellow and orange), cut into 1-in. chunks
  • 3 cloves garlic, thinly sliced
  • 2 tbsp. olive oil
  • Kosher salt
  • black pepper
  • 4 small chicken legs (about 2 lbs)
  • 4 cups baby spinach (about 5 oz)
  • 2 oz. feta cheese, crumbled
