Ingredients
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- Salt
- 3 eggs
- ¾ c. oil
- ¾ c. buttermilk
- 2 c. sugar
- 2 tsp. vanilla
- 1 sm. can crushed pineapple
- 2 c. grated carrots
- ½ c. chopped nuts
- ½ c. coconut
- Sift first 4 ingredients into a bowl. In another bowl mix well the next 5 ingredients. Add dry ingredients; mix well. Then add the last 4 ingredients. Bake in oblong pan at 350 degrees for 55 to 60 minutes.
