Puttanesca Chickpea Tomato Salad
Ingredients
  • Puttanesca Chickpea Tomato Salad
  • 1 ½ pounds ripe tomatoes of any size, cut into 1- or 2-bite pieces
  • 2 (15oz) cans of chick peas, rinsed and drained
  • ⅓ cup chopped red onion (I used shallots because it’s what I had)
  • Pinch chili flakes
  • ½ cup chopped parsley
  • ¼ cup chopped fresh oregano
  • ½ cup Parmesan
  • ¼ cup extra-virgin olive oil
  • ¼ cup kalamata olives,
  • 3 tbls drained capers chopped
  • Juice of one lemon
  • 1 garlic clove
  • chopped or grated Kosher salt, pepper
