Fried Apples ’n’ Onions—From The Little House Cookbook
This is a dish mentioned in Farmer Boy by Laura Ingalls Wilder. Great with pork!
Ingredients
  • 6 strips bacon
  • 2 med. onions, peeled and sliced thin
  • 3 med. tart apples, cored and sliced thin (leave the peel on to help the apples hold their shape and add some color to the dish)
  • 2 Tbsp. maple sugar or brown sugar (opt.)
Steps
  1. Fry the bacon until crisp; remove to paper towels to drain and when cool enough, chop or crumble and set aside.
  2. Add the sliced onions to the bacon drippings in the hot pan and cook over medium heat, stirring and turning occasionally to help them brown evenly, for about 15 minutes until they start to caramelize.
  3. Add the sliced apples on top in an even layer, sprinkle with the sugar if using, cover and heat until the apples soften, about five minutes.
  4. Toss the apples and onions together with the reserved bacon bits and serve warm.
