Chile Relleno Casserole

  • cooking spray
  • 2 (7 ounce) cans whole green chile peppers, drained (could use another can)
  • 8 ounces Monterey Jack cheese, shredded
  • 8 ounces Longhorn or Cheddar cheese, shredded
  • 6 eggs
  • 1 (5 ounce) can evaporated milk and enough milk to make ½ C
  • 2 tablespoons all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¼ pepper
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • 8 oz. tomato sauce
