Pork Goulash

Ingredients
  • 1 yellow onion, chopped
  • 1 large carrot, chopped
  • 1 red bell pepper, chopped
  • 1 ¾ lb pork, cut into 2" strips
  • 1 tsp. salt
  • ⅓ tsp. pepper
  • 3 Tbsp. tomato paste
  • 2 cans tomato puree
  • 24 oz. water + 8 oz. water
  • 1 bay leaf
  • 3 ½ oz. sour cream
  • 1 Tbsp. paprika
  • 1 Tbsp. flour
  • Egg noodles or macaroni noodles
Steps
  1. Cook onions in oil for 4 minutes.
  2. Add chopped carrots. Remove carrots and onions after 6 minutes.
  3. Brown pork pieces in oil in the pan. Add salt and pepper.
  4. Add in onions and carrots. Add tomato puree, 24 oz. water, and bay leaf to pork mixture. Simmer covered for 1.5 hours.
  5. Combine sour cream, 1 cup water, and flour in a bowl. Mix well. Add to pork mixture.
  6. Add in chopped red pepper and paprika and mix well. Cook another 15 minutes covered.
  7. Serve over potatoes, turnips, or noodles.
