  • 3 tsp dijon mustard OR 2 tsp dry mustard powder

  • 1 tbsp olive oil
  • subheading: SAUTÉED MUSHROOMS:
  • 2 tbsp / 30g unsalted butter
  • 250 g / 8 oz mushrooms , sliced
  • ¼ tsp each cooking/kosher salt & pepper
  • 2 garlic cloves , minced

  • 2 cups beef stock , low sodium
  • ¼ tsp each cooking/kosher salt & pepper
  • subheading: GRAVY THICKENER (SLURRY):
  • 3 tbsp flour (all purpose / plain)
  • 2 tbsp water
  • 2 tsp dijon mustard
  • 2 tsp Worcestershire sauce
