Ingredients
  • 8 oz cream cheese
  •  
  • 8 large eggs
  •  
  • ¼ cup eryrithritol
  •  
  • ½ tsp vanilla extract
Steps
  1. Microwave cream cheese 1 minute to soften
  2. Add all ingredients to a blender and mix thoroughly
  3. Pour into the base of a 10″ skillet and cook 90 seconds per side
  4. Serve with butter / syrup, whipped cream and fruit, or savory filling
