Denis Walter's Pea & Pistachio Salad
Ingredients
  • 200 g bag baby spinach
  • 250 g pistachios, shelled & crushed
  • 300 g frozen peas, refreshed in warm water
  • 1 red onion, finely diced
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 cup fresh mint leaves, picked
  • Olive oil, to taste
  • Salt & pepper, to taste
  • 100 g goat's cheese
