Cheesy Black Bean & Quinoa Skillet Casserole
Ingredients
  • 1 ⅔ cups water
  • 1 cup quinoa
  • ½ teaspoon salt, divided
  • 2 tablespoons avocado oil or other neutral oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups corn kernels (from about 2 ears)
  • 1 poblano pepper, chopped [or jalapeno for spicier]
  • 1 medium tomato, chopped [or a can of no-salt chopped tomatoes]
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can black beans, rinsed
  • 1 ¼ cups shredded extra-sharp Cheddar cheese, divided
  • Chopped cilantro for garnish
  • Salsa or pico de gallo for serving (optional)
