Bran Muffins (1/4 recipe)
Ingredients
  • 5 t. Baking Soda (1 ¼ t.)
  • 2 C. Boiling Water (½ C.)
  • 7 C. Raisin Bran cereal (1 ¾ C.)
  • 1 qt. Buttermilk (1 C.)
  • 1 C. Vegetable Oil (¼ C.)
  • 4 eggs (1 egg)
  • 2 C. Sugar (½ C.)
  • 5 C. Flour (1 ¼ C.)
  • 1 T. Salt
Steps
  1. Mix soda and water and set aside.
  2. Mix raisin bran and Buttermilk and set aside.
  3. Beat sugar, oil, and eggs together, then gradually add flour and salt.
  4. To this, add soda and water, then raisin bran mixture.
  5. Spoon into muffin cups and bake at 400° F for 20 to 25 minutes. Mix keeps in fridge for up to six weeks. You can also make individual muffins in mugs in the microwave (about 90 seconds).
