Nutritional Stacy's Home Made Tomato Sauce
All Natural Veggies  (R1 approved)  Prep Time: 30min Cook Time: 2hours

Ingredients
  • 1 tablespoon of Oil (Either coconut oil, grapeseed oil or avocado oil)
  • 1 cup: Garlic (minced)
  • 1 Cup: Onion (chopped)
  • 1 Jalapeno (sliced) - optional; adds just a little heat
  • 1 Cup Red Bell Pepper (sliced)
  • 1 cup Yellow Bell Pepper (sliced)
  • 2 cups Large Tomatoes (Cut in quarters)
  • 1 cup Mushrooms (cut)
  • Handful of Fresh Basil (chopped)
  • 1 Sprig of Fresh Rosemary (Remove from stem)
  • Salt and Pepper
Steps
  1. ~Start by Roasting your minced garlic by adding it to the bottom of your large pot (use a large pot because you will eventually be blending all of this together and letting it simmer); Once your garlic starts to get fragrant add about a tablespoon of your healthy fat oil; add in your chopped onion and let saute until fragrant as well; add in your bell peppers and jalapeno and let cook for about 2 to 4min before adding your quartered tomatoes; Lastly add in your fresh basil, rosemary and salt and pepper to taste; cover and let simmer (do not blend yet) for about 1 hour and 45min.
  2. ~In a seperate pan saute your mushrooms to add to your sauce later
  3. ~Blend your sauce to the consistency you prefer and leave uncovered for 15 to 20min to allow thickening
  4. ~Add in your sauted mushrooms (I add these after I have blended the sauce simply because I like the texture of a sliced mushroom but you can blend them if you prefer that)
  5. You are now ready to Enjoy your Sauce however you would like!!!!

  • 2 cups of Tomatoes: 160 Calories
  • Total: 356 Calories (1 serving = 89 calories)
  • ~Serve this over Zucchini and Squash noodles, you can make these with a spiralizer, with 5oz of cooked beef for an amazing spaghetti (Calories wth Noodles and Beef per serving = 429{thats with 1 cup of zucchini and 1 cup of squash})
  • ~Also great to use as a salsa over scrambled eggs or an omelet
  • ~Can use in a lasagna or as a pizza sauce
