Creamy White Turkey Chili

Super easy crockpot recipe! Substitute turkey for chicken. Or leave it out because there is plenty of protein without it.
Servings: 4 to 6 bowls

Ingredients
- 1 lb lean ground turkey
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp cumin
- ¾ tsp oregano
- ½ tsp chili powder
- ½ tsp cayenne pepper
- 1 yellow onion
- 1 orange bell pepper
- 1 to 2 fresh jalepeno's, thinly sliced (depending on desired spicy ratio)
- 2 cloves garlic, minced
- 1-15 oz can low sodium Northern beans, drained and rinsed
- 1 can mild or hot diced tomatoes with green chilis
- 5-10 oz frozen shelled edamame (use more if your omitting the meat)
- 24 fl oz low-sodium chicken or vegetable broth
- ¼ cup fresh cilantro, chopped
- 4 oz reduced-fat cream cheese
- ¼ 2% milk (can also use half and half)

- 2 avocados (½ each per serving)
- 2 T non-fat Greek yogurt
- 2 T reduced fat, shredded Mexican or Monterey Jack cheese
- 2 T green onions, chopped
Steps
- Add ground turkey to bottom of 6 to 8 qt crockpot or slow cooker. Top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
- Top with diced onion, diced bell pepper, minced garlic, great Northern beans, tomatoes and green chilis, edamame, chicken broth and cilantro.
- Cover and cook on low for 8 hours or on high for 3 to 4 hours.
- Carefully crumble ground turkey with meat chopper (or remove chicken and shred). Return meat back to crockpot/slow cooker.
- Add cream cheese and milk. Stir. Then cook on high for 15 minutes or until chili is creamy/slightly thickened.
- Stir well before serving. Add desired toppings. Enjoy!
