Not Your Grandma's Chicken and Rice Casserole
Fresh ingredients-no canned soup

Ingredients
  • 1 C. White Rice (uncooked)
  • 2 ½ C Chicken Stock
  • 2 C Cubed Chicken  (approx. 3 boneless skinless breasts)
  • ¾ C mayo
  • 1 C Diced Celery
  • 1 Tbs Lemon Juice
  • 8 to 10 Fresh Sliced Mushrooms
  •  
  • Topping
  • 3 Tbs Butter
  • 1 C crushed cornflakes
  • ½ C slivered or Chopped Almonds
Steps
  1. preheat oven to 350
  2. In dutch oven with a lid add all ingredients except topping ingredients and cook for 30 to 40 min or until chicken and rice are done.
  3. subheading: For Topping:
  4. Melt butter in skillet and add cornflakes- brown
  5. sprinkle on top of  casserole and add almonds
