Grandma Johnson’s German Potato Salad

Ingredients
  • 5 lbs red potatoes
  • 2 lbs bacon
  • ¾ package celery
  • large yellow onion
  • 1 bunch parsley
  • 1 cup rice vinegar
  • 1 cup white sugar
Steps
  1. peel potatoes and cut into cubes. boil potatoes until tender.
  2. meanwhile cut bacon into small pieces and cook in large pan, stirring frequently. when crispy, remove bacon with a slotted spoon.
  3. Dice onion and celery and sautee in bacon grease for 2 to 3 minutes. Drain a bit of the bacon grease. Add vinegar and sugar to pan and whisk with onion, celery and grease. pour all over the potatoes and stir well. add bacon and chopped parsley and stir well.
  4. may be reheated in a casserole dish for 30 minutes at 350 degrees, or may be kept warm in crock pot.
  5. Serve warm.
Notes
  • * amount of vinegar and sugar will depend upon how much bacon grease is made, but amount of vinegar and sugar should be equal, and should be enough to moisten the potatoes through when stirred. it is important to pour over potatoes and stir when they are very hot.
