  • 1 tbsp coconut sugar or brown sugar
  • 1 tbsp tomato paste
  • 1 tbsp flour all-purpose or gluten-free flour
  • ¼ cup ( 60 ml) red wine
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 1 tbsp soy sauce or tamari if gluten-free
  • 1 ¼ cup ( 300 ml) vegetable broth
  • 1 sprig of thyme
  • 1 bay leaf
  • 1 tsp yellow mustard or dijon
  • ½ tsp pepper or to taste
  • pinch of salt to taste
