Ingredients

- 1 ½ cups all-purpose flour, plus more for work surface
- 1 tablespoons granulated sugar
- ¾ teaspoon salt

- ¼ cup cold shortening, cubed
- 4 to 5 tablespoons ice-cold water

- ¾ cup granulated sugar
- ¾ cup heavy cream
- ¼ cup butter, melted
- 3 tablespoons all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon ground ginger
- 3 large eggs
- 4 medium-size (about 1 ¼ lb. total), firm-ripe peaches, sliced
