Cotechino (Homemade Italian Sausage Recipe)
Ingredients
  • 3 lbs pork belly with skin
  • 1 lbs pork shoulder
  • 1 lb pig ears (about 3)
  • 1.5 lb pig snout/cheek meat
  • 3 Tbsp Kosher (Diamond) salt
  • 3 Tbsp fennel seed
  • 2 Tbsp crushed red pepper flakes
  • 1 ½ Tbsp freshly ground black pepper
  • 1 Tbsp cayenne powder
