  • 750g / 1.6lb Baking Potatoes
  • 2 tbsp / 30g Butter
  • 1 large clove of Garlic, finely grated/minced
  • ¼ to ½ tsp Salt, or to taste
  • ⅛ to ¼ tsp Black Pepper, or to taste
  • 40g / 1.4oz Parmesan (see notes)
  • finely diced Fresh Chives, to garnish
