Ingredients
- 2 tablespoons oil
- 1 medium onion, diced
- 1 lb boneless chicken breast, cut into chunks and seasoned with salt and pepper
- 3 cloves garlic, minced
- 1 small can tomato paste
- 2 cups fresh tomatoes or a 15 ounce can diced tomatoes
- 6 cups chicken broth
- 8 ounces penne pasta
- ½ tsp crushed red pepper flakes (more if you want it more spicy)
- ½ tsp dried basil
- ½ tsp parsley flakes
- shredded mozzarella and/or shredded parmesan cheese
Steps
- Heat oil using saute, then add the onion and chicken and brown til no longer pink.
- Add the garlic and saute another minute, and then hit the cancel button.
- Add in other ingredients except cheese, stir well and lock the lid and turn valve to sealing position.
- Cook 4 minutes on manual (high pressure). Do a quick release and open once the pin drops.
- Add salt and pepper if desired, and serve with shredded cheese on top.
