Old Fashioned Swiss Steak
Ingredients
  • 2 pounds bottom round steak or cube steak
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • ¾ cup all-purpose flour (*for a gluten free version, skip this step and just pound out the steaks)
  • ¼ cup extra virgin olive oil, vegetable oil or bacon drippings
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 (14.5-ounce) can diced tomatoes
  • 2 teaspoons smoked paprika (love this stuff!)
  • 1 teaspoon dried oregano
  • 1 tablespoon Worcestershire Sauce
  • 1 ½ cups beef broth
