One Pot Caprese Chicken Pasta
Ingredients
  • 1 pound (1 package) Just BARE Organic Boneless Skinless Chicken Breast, cut into bite sized pieces
  • ½ cup diced yellow onion
  • 2 teaspoons minced garlic
  • 1 Tablespoon olive oil, divided
  • Kosher salt and fresh ground black pepper to taste
  • 2 cups low sodium chicken broth
  • ¾ cup water
  • 3 Tablespoons balsamic vinegar
  • 10 ounces whole wheat pasta, I used orecchiette
  • 1 ½ cups halved cherry tomatoes
  • 2 Tablespoons chopped fresh basil
  • ½ cup mini fresh mozzarella balls, halved
  • ¼ cup plain non-fat Greek yogurt (optional)
