PATS CHICKEN PAELLA

Ingredients
  • 300 gm brown basmati rice
  • 900 mls  chicken stock made out of 2 knorr chicken stock cubes or homemade stock
  • 100mls water
  • 500 gms chicken breasts cut into chunks
  • 1 onion diced
  • 1 sweet pointy red pepper deseeded and chopped
  • 2 cloves of garlic finely chopped or 2 teaspoons lazy garlic in vinegar
  • 3 teaspoons smoked paprika
  • 200 gms  of frozen chopped mixed veg
  • 500 gm box of passata
  • Frylite
Steps
  1. Sauté the onion and red pepper for a few minutes on the middle sauté setting add the garlic
  2. Sauté for a minute or 2 then the smoked paprika for another few minutes deglaze with the 100 mls of water or wine if you prefer add the chopped chicken and mix through. Add the rinsed rice ,stock and frozen veg stir through add the Passata on top do not stir through set on manual 10 minutes 12 minutes NPR stir through serve with fresh flat leaf parsley scattered on top
Notes
  • You can add cooked prawns and stir through before serving
