Speedy Skillet Lasagna

Ingredients
  • 1 pound sausage
  • ¼ cup onion, chopped
  • ½ cup carrot, peeled and chopped
  • 3 cups mini lasagna noodles or other pasta, uncooked
  • 3 cups water
  • 2 cups marinara or other tomato based sauce
  • ½ teaspoon italian seasoning
  • 8 ounces mushrooms
  • ⅓ cup shredded mozzarella cheese
Steps
  1. In a dutch oven over medium-high heat, cook sausage with onion and carrot for about 6 minutes, until sausage is no longer pink; drain.
  2. Stir in uncooked pasta and remaining ingredients except cheese.
  3. Heat to boiling; stirring occasionally.
  4. Reduce heat to low; simmer, uncovered, for 10 minutes, or until pasta is tender.
  5. Sprinkle with cheese before serving.
