Roasted carrots

Ingredients
  • 3 lbs Organic carrots, peeled and sliced on diagonal
  • ½ cup olive oil
  • ½ cup honey
  • 2 tbsp stone ground mustard
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp rosemary
Steps
  1. Mix all ingredients except carrots and wisk together. Pour into ziploc bag and add carrots. Marinate 4 to 6 hours in refrigerator. Drain off excess marinade and Roast in parchment paper and cookie sheet at 350° for 1 hour.
